Recipe: Southwest White Chicken Pizza

Wow... I had this last night for dinner, and it is really, really good. It's from the cookbook I mentioned here.



Preparation time: 15 minutes
Total time: 27 minutes

1 refrigerated ready-to-use pizza crust - 12 inch (wheat from Harris Teeter)
1/2 cup (1/2 of 8-oz. package) Philadelphia (Less Fat) Cream Cheese
1 boneless skinless chicken breast (1/4 lb.), cooked, chopped
1/4 cup chopped red onions (half of the onion)
1/3 cup picante sauce (we used HT's Medium Black Bean and Corn Salsa - Mmm)
1 avocado, thinly sliced

1. Heat oven to 400 degrees
2. Spread pizza dough with cream cheese; top with chicken and onions
3. Bake 10 to 12 minutes or until crust is golden brown
4. Top with remaining ingredients

It's delectable.
