Pretty Tasty

I loved my pretty pre-trip flowers from Hank:


I thoroughly enjoyed this tasty Quiche Crab made by Hank's Grandma at the lake over the weekend:


Quiche Crab

9" Pie Shell (She homemade hers via Jiffy)
2 T All Purpose Flower
1/2 Cup Milk
2 Cups (8 oz.) Shredded Swiss Cheese
1/3 Cup Chopped Green Onion
1/2 Cup Mayonnaise
2 Eggs Beaten
1 (16 oz.) Package frozen crabs thawed and drained (you can buy it in a can via Phillips)
Fresh Parsley

Line quiche dish (or pie plate) with pastry and trim edges. Place buttered/cooking sprayed aluminum foil (buttered side down) over pastry and gently place into shell. Cover foil with a layer of dried beans (or baking rocks), and bake at 400 degrees for 10 minutes. Prick shell and bake 3 - 5 additional minutes. Let cool. (P.S. The rocks and/or dried beans keeps your shell from rising so there is plenty of room for the filling!)

Combine mayonnaise, flour, eggs and milk thoroughly. Stir in crab, cheese and onion. Spoon into shell. Bake at 350 degrees for 30 minutes or until center is firm. Sprinkle with parsley.
